Cooking Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Once cooked, drain and set aside.

Chop the Vegetables
While the pasta is cooking, chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the zucchini and bell pepper, and cook for 5 minutes, stirring occasionally.

Add Spinach and Tomatoes
Add the cherry tomatoes and spinach to the skillet. Cook for an additional 3-4 minutes until the spinach is wilted and the tomatoes are slightly softened.

Combine Pasta and Sauce
Once the vegetables are cooked, add the drained pasta to the skillet. Season with salt, black pepper, and red pepper flakes. Toss everything together gently until the pasta is well coated with the olive oil and mixed with the vegetables.

If desired, sprinkle with Parmesan cheese before serving. Divide the pasta among serving plates and enjoy your vegetarian pasta.
