Method

For the Grilled Salmon

  1. 1

    Prepare the Salmon

Preheat your grill to medium-high heat. Pat the salmon fillets dry with paper towels.

  2. 2

    Season the Salmon

In a small bowl, mix together olive oil, garlic powder, salt, black pepper, and lemon juice. Brush this mixture over the salmon fillets.

  3. 3

    Grill the Salmon

Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side or until the salmon is cooked through and flakes easily with a fork. Remove from grill and set aside.

For the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is grilling, wash and chop the zucchini, bell pepper, and asparagus into bite-sized pieces.

  2. 5

    Season and Cook the Vegetables

In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper. Grill the vegetables on the grill alongside the salmon for about 4-6 minutes, turning occasionally until tender.

For the Lemon Butter Sauce

  1. 6

    Make the Sauce

In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant.

  2. 7

    Finish the Sauce

Stir in the lemon juice and chopped parsley. Season with salt to taste. Remove from heat and set aside to thicken slightly.
