Vegetable and Egg Mixture

Method

Cooking Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Sauté the Vegetables

In a large oven-safe skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sauté for about 5 minutes until softened. Stir in the zucchini and cook for an additional 3 minutes.

  3. 3

    Add Spinach and Tomatoes

Add the chopped spinach and halved cherry tomatoes to the skillet. Cook for another 2-3 minutes until the spinach is wilted.

  4. 4

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, salt, and black pepper until well combined. Pour the egg mixture over the sautéed vegetables in the skillet.

  5. 5

    Add Feta Cheese

Sprinkle the crumbled feta cheese evenly over the top of the egg and vegetable mixture.

  6. 6

    Bake the Frittata

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is slightly golden.

  7. 7

    Cool and Serve

Remove from the oven and let it cool for a few minutes. Slice into wedges and serve warm or at room temperature.
