    Prepare the Eggplant

    Slice the eggplant into 1/2 inch thick rounds. Sprinkle with salt and let them sit for about 30 minutes to draw out moisture.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Rinse and Pat Dry

    After 30 minutes, rinse the eggplant under cold water to remove excess salt. Pat them dry with paper towels.

    Coat the Eggplant

    In a bowl, whisk the eggs. Dip each eggplant slice into the egg mixture, then coat with breadcrumbs.

    Fry the Eggplant

    In a skillet, heat olive oil over medium heat. Fry the eggplant slices until golden brown on both sides, about 3-4 minutes per side. Set aside on paper towels to drain excess oil.

    Layer the Ingredients

    In a baking dish, spread a layer of marinara sauce, followed by a layer of fried eggplant, then mozzarella cheese, a sprinkle of Parmesan, and some basil. Repeat layers until all ingredients are used, finishing with a layer of marinara sauce and cheese on top.

    Bake

    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

    Let it cool for 10 minutes before serving. Garnish with fresh basil and black pepper to taste.
