    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add the vegetable oil and vanilla extract. Mix well.

    Combine Mixtures

    Gradually add the wet mixture to the dry ingredients, stirring until just combined.

    Add Carrots and Nuts

    Fold in the shredded carrots, chopped walnuts, and raisins until evenly distributed.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    Allow the cakes to cool in the pans for 10 minutes, then remove from pans and let cool completely on a wire rack.
