    Cook the Soba Noodles

    Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process.

    Prepare the Vegetables

    In a large bowl, combine arugula, watercress, savoy cabbage (finely shredded), and fresh herbs. Toss gently to combine.

    Cook the Steak

    Season the steak with salt and pepper. Heat a skillet over medium-high heat and cook the steak to your desired doneness (about 4-5 minutes per side for medium-rare). Remove from heat and let it rest for a few minutes before slicing thinly.

    Make the Jaew Dressing

    In a small bowl, combine 2 tablespoons of fish sauce, 1 tablespoon of lime juice, 1 tablespoon of sugar, and 1 tablespoon of toasted rice powder. Mix well until sugar is dissolved.

    In the large bowl with the vegetables, add the cooked soba noodles, sliced steak, and jaew dressing. Toss everything together gently until well combined. Serve immediately.
