Method

Preparation Steps

  1. 1

    Prepare the Reduction

In a small saucepan, combine the shallots, white wine vinegar, dry white wine, and half of the chopped tarragon. Bring to a simmer over medium heat and cook until reduced by half. Strain the mixture to remove the solids and set aside.

  2. 2

    Melt the Butter

In another small saucepan, melt the butter over low heat until it is fully melted and begins to foam. Remove from heat and let it cool slightly.

  3. 3

    Whisk Egg Yolks

In a heatproof bowl, whisk together the egg yolks and the strained reduction until well combined.

  4. 4

    Cook the Sauce

Place the bowl over a pot of simmering water (double boiler method) and whisk constantly until the mixture thickens and becomes creamy. This should take about 5 to 7 minutes.

  5. 5

    Add Butter

Slowly drizzle in the melted butter while continuing to whisk the sauce until it is smooth and emulsified.

  6. 6

    Finish the Sauce

Stir in the remaining tarragon, salt, black pepper, and lemon juice. Adjust seasoning to taste.

  7. 7

    Serve

Serve the Béarnaise sauce warm with your choice of meat or vegetables.
