Prepare the Chicken
Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels. Rub the olive oil all over the chicken, including under the skin. Season generously with salt and black pepper, both inside and out.

Add Flavorings
Stuff the cavity of the chicken with garlic cloves, rosemary, and lemon halves. This will infuse the chicken with flavor as it roasts.

Roast the Chicken
Place the chicken in a roasting pan and put it in the preheated oven. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through cooking.

Prepare the Braised Greens
While the chicken is roasting, heat a tablespoon of olive oil in a large skillet over medium heat. Add the braised greens and sauté for about 5-7 minutes until wilted and tender. Season with salt and pepper to taste.

Toast the Sourdough
Toast the sourdough bread slices until golden brown, either in a toaster or on a skillet.

Serve
Once the chicken is roasted, let it rest for 10 minutes before carving. Serve the chicken with the braised greens and toasted sourdough on the side.
