    In a large skillet over medium heat, cook the chopped bacon until crispy. Remove it from the skillet and set aside, leaving the bacon fat in the pan.

    In the same skillet, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the shrimp, salt, and black pepper, cooking until the shrimp turn pink, about 3-4 minutes. Remove the shrimp and set aside.

    In a pot, cook the red rice according to package instructions. Typically, this involves rinsing the rice, adding it to boiling water, and simmering until tender, around 30-35 minutes.

    Once the rice is cooked, fluff it with a fork and then add the cooked shrimp and bacon back into the pot. Mix in the chopped parsley and adjust seasoning with more salt and pepper if needed.
