Fried Green Tomatoes
Method
Preparation and Cooking
- 1
Prepare the Tomatoes
Slice the green tomatoes into 1/4-inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.
- 2
Set Up Breading Station
In one bowl, combine the flour with black pepper and cayenne pepper. In a second bowl, pour the buttermilk. In a third bowl, place the cornmeal.
- 3
Bread the Tomatoes
Dredge each tomato slice in the flour mixture, then dip into the buttermilk, and finally coat with cornmeal. Make sure each slice is well coated.
- 4
Fry the Tomatoes
In a large skillet, heat vegetable oil over medium heat. Once hot, carefully place the breaded tomato slices in the oil, frying them in batches. Cook for about 3-4 minutes on each side until golden brown and crispy.
- 5
Drain and Serve
Remove the fried tomatoes and place them on paper towels to drain excess oil. Serve topped with jumbo lump crabmeat, drizzled with remoulade and hollandaise sauce.
