Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This will help them become crispier when cooked.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Dry and Toss the Fries
Drain and dry the fries thoroughly using a clean kitchen towel. In a large bowl, toss the fries with black truffle oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Add Parmesan
Remove the fries from the oven and immediately sprinkle with grated Parmesan cheese, tossing to combine while still hot.
