    Prepare the Pot Roast

    Season the chuck roast with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove from pot and set aside.

    Braise the Meat

    Add the beef broth, minced garlic, bay leaves, and thyme to the pot. Return the roast to the pot, cover, and simmer on low heat for 3-4 hours, or until the meat is tender.

    Sauté the Vegetables

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes. Remove and set aside. In the same skillet, add the sliced mushrooms and sauté until browned, about 5-7 minutes.

    Assemble the Sandwich

    Once the roast is done, shred the meat and mix with the sautéed mushrooms and caramelized onions. Preheat the broiler. On the split baguette, spread a layer of mayonnaise. Top with the meat mixture, Swiss cheese, and crumbled bacon. Place under the broiler until the cheese is melted and bubbly.

    Serve the sandwiches with shredded lettuce and sliced tomato. Pour the au jus into small bowls for dipping.
