Make the Crust
In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the parsley. Add ice water, one tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Preheat Oven
Preheat the oven to 375°F (190°C).

Roll Out the Crust
On a floured surface, roll out the chilled dough to fit your pie dish. Place it in the dish and trim the edges.

Assemble the Quiche
Pour the filling into the prepared crust. Bake for 35-40 minutes or until the filling is set and the top is golden.
