Make the Dough
In a large mixing bowl, combine flour, sugar, yeast, and salt. In a separate bowl, heat the milk until warm (not hot) and whisk in the eggs, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.

Knead and Rise
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise in a warm place for 1-2 hours until doubled in size.

After the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into squares or circles using a pastry cutter or knife.

Fry the Beignets
In a deep pot or fryer, heat oil to 350°F (175°C). Fry the beignets in batches, about 2-3 minutes on each side, until golden brown. Remove and drain on paper towels.
