Marinate the Chicken
In a mixing bowl, combine the chicken breasts with the pesto sauce, olive oil, salt, and black pepper. Ensure the chicken is well coated in the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.

Grill the Chicken
Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

Add Cheese
In the last 2 minutes of grilling, place slices of smoked mozzarella cheese on top of the chicken breasts. Close the grill lid to help the cheese melt.

Prepare the Toppings
While the chicken is grilling, slice the tomatoes into thin rounds and set aside. Prepare the spinach and artichoke spread for serving.

Assemble the Dish
Once the chicken is grilled and the cheese has melted, remove it from the grill. Let it rest for a few minutes. Serve the chicken topped with spinach and artichoke spread, sliced tomatoes, and fresh basil leaves.
