Prepare the Burger Patties
In a large mixing bowl, combine the ground beef, salt, and black pepper. Mix gently until well combined, being careful not to overwork the meat. Shape the mixture into 4 equal patties.

Grill the Patties
Preheat your grill or skillet over medium-high heat. Lightly brush the grill with olive oil to prevent sticking. Place the burger patties on the grill and cook for about 4-5 minutes per side, or until they reach your desired level of doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

Prepare the Red Onion
While the burgers are cooking, slice the red onion into thin rings. Set aside.

Toast the Buns
Cut the burger buns in half and toast them on the grill or in a toaster until golden brown, about 1-2 minutes.

Assemble the Burgers
Spread a tablespoon of Bavarian mustard on the bottom half of each toasted bun. Place a cheeseburger patty on top, followed by a generous scoop of sauerkraut and a few rings of red onion. Sprinkle fresh parsley on top for garnish, and cap with the top half of the bun.
