    Prepare the Turkey

    Preheat your smoker to 225°F (107°C). Rinse the turkey breast under cold water and pat dry with paper towels.

    Apply Cajun Rub

    Rub the cajun spice all over the turkey breast, ensuring it's evenly coated. Let it sit for at least 30 minutes to absorb the flavors.

    Smoke the Turkey

    Place the turkey breast in the smoker and smoke for approximately 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

    Cook the Bacon

    While the turkey is smoking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.

    Prepare Vegetables

    Slice the tomato and cucumber thinly. Set aside.

    Assemble the Sandwich

    Once the turkey is done smoking, allow it to rest for 10 minutes before slicing. Layer the turkey, bacon, baby spinach, sliced tomato, sliced cucumber, and sharp cheddar cheese on your choice of bread. Drizzle with chipotle sauce.
