Prepare Tortillas
In a separate skillet, lightly warm corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Enchiladas
Place about 1/4 cup of the chicken filling onto each tortilla. Roll them tightly and place seam-side down in a greased baking dish.

Add Cheese
Once all enchiladas are assembled, sprinkle the shredded cheddar cheese evenly over the top.

Bake
Preheat the oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a few minutes. Serve hot topped with sour cream, pico de gallo, and garnish with chopped cilantro.
