    Prepare the Sweet Onions

    Slice the large sweet onion into thin rings. This will help them caramelize nicely when griddled.

    Cook the Onions

    In a skillet over medium heat, add 1 tablespoon of oil and 1 tablespoon of butter. Once melted, add the sliced onions and cook them slowly, stirring occasionally, until they are golden brown and caramelized, approximately 10-15 minutes. Remove from heat and set aside.

    Form the Beef Patties

    While the onions are cooking, divide the ground beef into two equal portions (about 8 ounces each). Gently form each portion into a ball without overworking the meat.

    Preheat the Griddle

    Heat a large cast iron skillet or griddle over medium-high heat. Allow it to get hot before cooking the beef patties.

    Cook the Smash Patties

    Once the griddle is hot, add 1 tablespoon of oil. Place the beef balls onto the griddle, and using a spatula, smash them down firmly into thin patties. Season with salt and pepper. Cook for about 2-3 minutes on one side until a crust forms, then flip the patties.

    Add the Cheese

    As soon as you flip the patties, place 2 slices of sharp cheddar and 2 slices of white American cheese on each patty. Cover the griddle with a lid to help the cheese melt for about 1-2 minutes.

    Toast the Buns

    While the cheese is melting, butter the insides of the burger buns. In a separate pan or on the griddle, toast the buns until golden brown.

    Assemble the Smash Melt

    Once the cheese is melted and the buns are toasted, place each patty on the bottom half of the bun. Top with a generous helping of caramelized onions and place the top half of the bun over the onions.
