Prepare the Sweet Onions
Slice the large sweet onion into thin rings. This will help them caramelize nicely when griddled.

Cook the Onions
In a skillet over medium heat, add 1 tablespoon of oil and 1 tablespoon of butter. Once melted, add the sliced onions and cook them slowly, stirring occasionally, until they are golden brown and caramelized, approximately 10-15 minutes. Remove from heat and set aside.

Form the Beef Patties
While the onions are cooking, divide the ground beef into two equal portions (about 8 ounces each). Gently form each portion into a ball without overworking the meat.

Cook the Smash Patties
Once the griddle is hot, add 1 tablespoon of oil. Place the beef balls onto the griddle, and using a spatula, smash them down firmly into thin patties. Season with salt and pepper. Cook for about 2-3 minutes on one side until a crust forms, then flip the patties.

Add the Cheese
As soon as you flip the patties, place 2 slices of sharp cheddar and 2 slices of white American cheese on each patty. Cover the griddle with a lid to help the cheese melt for about 1-2 minutes.

Serve
Cut the burgers in half if desired, serve hot, and enjoy your Big Dog Smash Melt!
