Pasta

Method

Pasta Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

  1. 2

    Prepare the Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and set all the vegetables aside.

Garlic Sauce Preparation

  1. 3

    Make the Garlic Sauce

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

  2. 4

    Add Vegetables

Add the chopped bell peppers, zucchini, carrot, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.

  3. 5

    Add Broth and Season

Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper. Stir in the spinach and cook until wilted, about 2 minutes.

Combine and Serve

  1. 6

    Combine Pasta and Sauce

Add the cooked pasta to the skillet with the vegetables and garlic sauce. Toss well to combine and heat through.

  2. 7

    Serve

Serve the Pasta Primavera hot, garnished with grated Parmesan cheese.
