Cooking Quinoa

    Place the quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes to remove the bitter coating.

    In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Dice the red bell pepper and chop the spinach. Set aside.

    In a large skillet, heat the olive oil over medium heat.
