Method

Prepare the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the salmon fillets, ensuring they are well coated. Let marinate for at least 30 minutes.

    Preheat Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

    Grill the Salmon

    Place the marinated salmon fillets on the grill. Cook for about 5-6 minutes on each side or until the salmon flakes easily with a fork.

Prepare the Vegetables

    Prepare the Vegetables

    Wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces.

    Season the Vegetables

    In a bowl, toss the vegetables with olive oil, salt, and black pepper.

    Grill the Vegetables

    Add the seasoned vegetables to the grill during the last 10 minutes of cooking the salmon. Grill until tender and slightly charred.

Make the Lemon Butter Sauce

    In a small saucepan over low heat, melt the butter.

    Once melted, add minced garlic and lemon juice to the butter. Stir and cook for 2 minutes until the garlic is fragrant.

    Stir in fresh parsley, and season with salt and black pepper to taste. Remove from heat.

Serve

    On a serving plate, place a piece of grilled salmon alongside the grilled seasonal vegetables. Drizzle the lemon butter sauce over the salmon and vegetables.
