Method

For the Calamari

  1. 1

    Prepare the Calamari

Begin by rinsing the calamari rings under cold water and patting them dry with paper towels.

  2. 2

    Make the Breading

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to combine.

  3. 3

    Soak in Buttermilk

Pour the buttermilk into a separate bowl. Dip each calamari ring into the buttermilk, ensuring it is fully coated, then transfer it to the flour mixture. Toss to coat evenly.

  4. 4

    Heat the Oil

In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Calamari

Working in batches, carefully add the coated calamari rings to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

For the Spicy Marinara Sauce

  1. 6

    Prepare the Marinara Sauce

In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 7

    Simmer the Sauce

Add the canned crushed tomatoes, dried oregano, red pepper flakes, salt, and black pepper. Stir well and bring the sauce to a simmer. Reduce the heat and let it cook for about 15-20 minutes, stirring occasionally.

  3. 8

    Finish the Sauce

Once the sauce has thickened, remove from heat and stir in the chopped fresh basil.
