Crust Preparation

Make the crust
Preheat your oven to 325°F (163°C). In a bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake in the preheated oven for 10 minutes. Remove and let cool.

Prepare the filling
In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the granulated sugar, mixing until well combined.

Add remaining filling ingredients
Add the sour cream, vanilla extract, and flour to the cream cheese mixture. Mix until smooth. Then, add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Pour and bake
Pour the filling over the cooled crust in the springform pan. Bake at 325°F (163°C) for 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.

Cool and refrigerate
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.

Prepare the strawberry topping
In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit for about 15 minutes to allow the juices to release.

Serve the cheesecake
Once the cheesecake is thoroughly chilled, remove it from the springform pan. Top with the prepared strawberries just before serving.
