Method
Preparation
- 1
Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- 2
Combine Wet Ingredients
In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.
- 3
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.
- 4
Add Flavorings
Fold in chocolate chips or your choice of fresh fruit (strawberries, blueberries, or banana) gently into the batter.
- 5
Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or additional melted butter. Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- 6
Serve
Serve pancakes warm, topped with whipped cream and a dusting of powdered sugar.
