Prepare the Potatoes
Peel the Russet potatoes and cut them into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

Mash the Potatoes
Once the potatoes are cool enough to handle, mash them in a large bowl until smooth. Allow to cool completely.

Mix Ingredients
Add flour, cornstarch, salt, black pepper, garlic powder, and onion powder to the mashed potatoes. Mix until well combined.

Shape the Tater Tots
Take small portions of the potato mixture and shape them into small cylindrical tots. Place them on a baking sheet lined with parchment paper.

Fry the Tater Tots
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the tater tots in batches and fry until golden brown, about 3-4 minutes per side.

Drain and Serve
Remove the tater tots from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
