Prepare the Pork Belly
Preheat your oven to 160°C (320°F). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub the pork belly with salt and black pepper.

Roast the Pork Belly
Place the pork belly on a baking tray and roast in the preheated oven for about 2 hours, or until the meat is tender.

Crisp the Skin
Increase the oven temperature to 220°C (428°F) and roast for an additional 20-30 minutes, until the skin is crispy.

Prepare the Sauce
In a saucepan, heat the cooking oil over medium heat. Add the sweet chili sauce and bring to a simmer. Cook for 5 minutes until slightly thickened.

Combine and Serve
Once the pork belly is done, remove it from the oven and let it rest for 10 minutes. Slice the pork belly and toss it in the sticky sweet chili sauce. Serve topped with sliced scallions.
