Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and onions. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender.

Assemble Quesadilla
On one half of each tortilla, sprinkle a generous amount of Colby Jack cheese. Top with sautéed peppers and onions, and then add more cheese on top. Fold the tortillas over to create a half-moon shape.

Cook Quesadilla
In the same skillet, cook the quesadillas over medium heat for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. You may need to cook them in batches.

Serve
Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve with sour cream on the side. Optionally, add guacamole and your choice of protein for an extra charge.
