Prepare the Pork
In a bowl, mix smoked paprika, brown sugar, cumin, salt, and black pepper. Rub this mixture all over the pork shoulder.

Sear the Pork
In a large skillet, heat some oil over medium-high heat. Sear the pork shoulder on all sides until browned (about 3-4 minutes per side).

Cook the Pork
Place the seared pork shoulder in a slow cooker. Add chopped onion, minced garlic, and apple cider vinegar. Cook on low for 8 hours or on high for 4 hours.

Shred the Pork
Once the pork is tender, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with BBQ sauce. Let it cook for an additional 30 minutes.

Prepare the Buns
While the pork is finishing, grill the potato buns until toasted.

Assemble the Sandwiches
Serve the pulled pork on the grilled potato buns and drizzle extra BBQ sauce on top if desired.
