Directions for Pulled Pork Benedict

Prepare the Pulled Pork
If not already prepared, cook the pulled pork until tender and shred it. Combine with the sweet BBQ sauce and set aside.

Toast the English Muffins
Slice the English muffins in half and toast them until golden brown.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

Assemble the Benedict
On each toasted English muffin half, place a generous portion of the pulled pork mixture. Top each with a poached egg.

Add Hollandaise Sauce
Spoon hollandaise sauce over each poached egg. Season with salt and black pepper to taste.

Garnish
Sprinkle chopped fresh chives on top for garnish.
