Prepare the Goat Skins
Preheat your oven to 375°F (190°C). Rub the goat skins with olive oil, salt, and black pepper. Place them on a baking sheet and bake for 15-20 minutes until crispy.

Load the Skins
Once the goat skins are crispy, remove them from the oven. Start by layering the cooked chili evenly over each skin, then add shredded brisket on top of the chili.

Add Cheese and Scallions
Sprinkle the shredded Colby Jack cheese generously over the loaded goat skins. Top with sliced scallions.

Return the loaded goat skins to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
