Preparation and Cooking

    Prepare the Dipping Sauce

    In a small bowl, combine 1 cup of mayonnaise, 1 tablespoon of chipotle peppers in adobo sauce, 1 teaspoon of lime juice, and salt to taste. Mix well and set aside.

    Prepare the Breading Station

    Set up a breading station with three shallow bowls. In the first bowl, place the flour mixed with salt, pepper, and paprika. In the second bowl, whisk together the eggs and milk. In the third bowl, combine the cornmeal with a pinch of salt.

    Bread the Pickles and Jalapeños

    Dip each pickle slice and jalapeño slice first into the flour mixture, then into the egg mixture, and finally into the cornmeal. Ensure they are well coated.

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Pickles and Jalapeños

    Carefully add the breaded pickles and jalapeños to the hot oil in batches. Fry until golden brown, about 2-3 minutes per side. Remove from oil and drain on paper towels.
