Cooking Instructions

    Cook the Macaroni

    In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until bubbly. Gradually whisk in the milk, continuing to stir until the mixture thickens, about 5-7 minutes.

    Add Cheeses

    Remove the pot from heat and add the sharp cheddar, monterey jack, mozzarella, parmesan, gouda, fontina, and cream cheese to the sauce. Stir until all the cheese is melted and smooth.

    Combine Macaroni and Sauce

    Add the drained macaroni to the cheese sauce and stir until well coated.

    Prepare Scallions

    Chop the scallions and set them aside for garnishing.

    Prepare Cornbread

    In a mixing bowl, prepare the cornbread mix according to package instructions, adding water and any additional ingredients as needed. Bake as directed.

    Serve

    Serve the mac and cheese hot, garnished with scallions. Add optional Buffalo chicken, pulled pork, or BBQ brisket on the side, and serve with cornbread.
