Instructions

  1. 1

    Prepare the Cinnamon Swirl

In a small bowl, mix together the brown sugar, ground cinnamon, and softened butter until well combined. Set aside.

  2. 2

    Make the Pancake Batter

In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt. In another bowl, combine the buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

  3. 3

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of pancake batter onto the skillet. Drizzle a spoonful of the cinnamon swirl mixture on top of the pancake. Use a toothpick or knife to swirl the cinnamon mixture into the batter. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.

  4. 4

    Prepare the Icing

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or sugar if necessary.

  5. 5

    Serve

Stack the pancakes on a plate, drizzle with icing, and serve warm.
