    Prepare the Brisket

    Preheat your oven to 300°F (150°C). In a bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mix all over the brisket.

    Sear the Brisket

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the brisket and sear it on all sides until browned, about 4-5 minutes per side.

    Cook the Brisket

    Transfer the brisket to a roasting pan. Pour water into the pan and cover with foil. Roast in the preheated oven for 3-4 hours, or until the brisket is tender.

    Rest the Brisket

    Once cooked, remove the brisket from the oven and let it rest for at least 30 minutes before slicing.

    Prepare the Buns

    While the brisket is resting, grill the potato buns on a skillet or grill until golden brown.

    Slice the brisket against the grain and place a generous amount on each potato bun. Drizzle with BBQ sauce and serve immediately.
