Pancake Preparation

    Prepare the Batter

    In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, egg, and melted butter. Mix the wet ingredients into the dry ingredients until just combined. Gently fold in the fresh blueberries.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for an additional 2-3 minutes until golden brown.

    Prepare the Cocktail

    In a shaker filled with ice, combine 1.5 oz of Pinnacle Blueberry Vodka and 0.5 oz of Dekuyper Buttershots. Shake well and strain into a chilled glass.

    Serve

    Serve the pancakes warm with a drizzle of the blueberry vodka cocktail or enjoy it on the side as a shot. Garnish with additional fresh blueberries if desired.
