    Prepare the Potatoes

    Wash and cube the Russet potatoes into bite-sized pieces. Pat them dry with a paper towel.

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the cubed potatoes and season with salt, pepper, garlic powder, and onion powder. Cook, stirring occasionally, until the potatoes are golden brown and crispy, about 15-20 minutes.

    Cook the Bacon

    While the potatoes are cooking, in a separate pan, cook the bacon until crispy. Remove from the pan, crumble, and set aside.

    Make the Cheese Sauce

    In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually add the milk while whisking continuously until the mixture thickens, about 3-5 minutes. Stir in the cheddar cheese and cream cheese until melted and smooth. Add hot sauce, salt, and pepper to taste.

    Combine and Serve

    Once the potatoes are cooked and crispy, remove from heat and transfer to a serving dish. Pour the cheese sauce over the top and sprinkle with crumbled bacon. Serve immediately.
