Prepare the Veal
Season the veal cutlets with salt and black pepper on both sides.

Sear the Veal
In a large skillet over medium-high heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add the veal cutlets and cook for about 3-4 minutes on each side until browned. Remove from skillet and set aside.

Sauté the Mushrooms
In the same skillet, add the remaining tablespoon of olive oil and the shiitake mushrooms. Sauté until the mushrooms are soft, about 5 minutes.

Make the Sauce
Add the minced garlic to the mushrooms and cook for an additional minute. Pour in the Marsala wine and chicken broth, scraping the bottom of the pan to deglaze. Bring to a simmer and reduce the sauce for about 5-7 minutes.

Combine Ingredients
Return the veal cutlets to the skillet and cook for another 3-4 minutes, ensuring they are heated through and coated in the sauce.

Finish and Serve
Stir in the remaining tablespoon of butter and chopped parsley into the sauce. Serve the veal Marsala with mashed potatoes and seasonal vegetables.
