Prepare the pasta
Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the meat
In a large skillet or pot, heat olive oil over medium heat. Add the chopped onions, celery, and carrots. Sauté until softened, about 5 minutes.
Add the meats
Add the ground beef, veal, and pork to the skillet. Cook until browned, breaking up the meat with a spoon. Season with salt and black pepper.
Combine with marinara
Once the meat is cooked through, stir in the homemade marinara sauce. Let it simmer for 10-15 minutes to allow the flavors to meld.
Mix in the basil
Stir in the chopped fresh basil into the sauce, reserving a little for garnish.
Combine with pasta
Add the cooked rigatoni to the sauce, tossing to combine thoroughly.
Serve
Plate the pasta, top with whipped ricotta, and sprinkle with additional fresh basil. Serve immediately.
