    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes. Toss them in olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes or until golden and crispy.

    Sauté the Green Beans

    While the potatoes are roasting, bring a pot of salted water to a boil. Blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.

    Cook the Salmon

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the salmon in the skillet, skin-side down, and cook for 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes or until cooked through.

    Make the Honey Glaze

    In a small saucepan, melt the butter over low heat. Add honey and lemon juice, stirring until combined. Allow it to simmer for a couple of minutes until slightly thickened.

    Serve

    On each plate, arrange the roasted potatoes and sautéed green beans alongside the salmon. Drizzle the buttery honey glaze over the salmon and serve hot.
