    Prepare the Ingredients

    Dice the zucchini, onion, and tomato. Cut the bacon into small pieces.

    Cook the Bacon

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pan.

    Sauté the Vegetables

    In the same skillet, add the diced zucchini and Vidalia onion. Sauté for about 5 minutes until soft. Add the diced tomato and cook for an additional 2 minutes.

    Combine Eggs and Seasonings

    In a bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture over the sautéed vegetables in the skillet.

    Add Bacon and Cheese

    Sprinkle the cooked bacon and shredded cheese over the egg mixture. Let it cook for about 3-4 minutes until the edges start to set.

    Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes or until the frittata is fully set and lightly golden on top.
