    Prepare the Potatoes

    Boil the potatoes in salted water until tender. Drain and mash with butter, milk, and salt to taste.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add broccoli florets, red roasted peppers, and mushrooms, cooking until tender.

    Cook the Tenderloin

    In the same skillet, add the tenderloin tips and sear until browned on all sides. Remove and set aside.

    Make the Red Wine Reduction

    In the skillet, add garlic and cook for 1 minute. Pour in red wine and beef broth, scraping up any browned bits. Simmer until reduced by half.

    Combine

    Return the tenderloin tips to the skillet, season with salt and pepper, and let simmer for 5 minutes.

Serving

    Plate the Dish

    Spoon the mashed potatoes onto plates, top with the tenderloin tips and vegetables, and drizzle with the red wine reduction.
