    Prepare the Sausage

    In a pan over medium heat, add olive oil and cook the spicy sausage until browned and fully cooked, about 5-7 minutes. Add minced jalapeño, black pepper, and garlic powder, and cook for another 2 minutes. Remove from heat.

    Assemble the Sandwich

    Spread butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, layer 2 slices of American cheese, followed by the cooked sausage mixture, and top with the remaining cheese slices. Place the other slices of bread on top, buttered side up.

    Grill the Sandwich

    In the same pan, grill the sandwiches over medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. You can press down gently with a spatula for even grilling.

    Serve

    Remove the sandwiches from the pan, cut in half, and serve hot with mustard on the side.
