    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper.

    Sear the Ribs

    In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear them on all sides until browned, about 3-4 minutes per side. Remove the ribs from the pot and set aside.

    Caramelize the Onions

    In the same pot, add the sliced onions and cook on medium heat until they caramelize, about 15 minutes, stirring occasionally.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it cook for about 2-3 minutes.

    Add the Remaining Ingredients

    Return the short ribs to the pot. Add beef broth and thyme. Bring to a simmer.

    Braise the Short Ribs

    Cover the pot and transfer it to the preheated oven. Braise for about 3 hours or until the ribs are tender.

    Prepare the Whipped Sour Cream

    While the ribs are cooking, whip the sour cream until fluffy. Set aside.

    Once the ribs are done, remove them from the oven. Serve the short ribs topped with caramelized onions, shaved asiago cheese, and dollops of whipped sour cream.
