Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower, and cut it into bite-sized florets.

Make the Rub
In a small bowl, mix together olive oil, chili powder, lime juice, garlic powder, onion powder, cayenne pepper, and salt to create the dry rub.

Coat the Cauliflower
Place the cauliflower florets in a large mixing bowl and pour the rub mixture over them. Toss well to ensure that all pieces are evenly coated.

Roast the Cauliflower
Spread the cauliflower evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.

Prepare the Chipotle Mayonnaise
In a small bowl, mix together mayonnaise with smoked chipotle powder to taste, adjusting the spice level based on your preference.

Remove the roasted cauliflower from the oven and serve warm with the smoked chipotle mayonnaise on the side.
