    Prepare the Pork Chop

    Season the pork chop with salt, black pepper, and thyme. Let it marinate for at least 30 minutes.

    Grill the Pork Chop

    Preheat the grill to medium-high heat. Grill the pork chop for about 6-8 minutes on each side, or until it reaches an internal temperature of 145°F (63°C). Remove from heat and let it rest.

    Make the Mashed Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash them with butter until smooth. Season with salt and pepper to taste.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10 minutes. Add sliced shiitake mushrooms and diced Granny Smith apple, and cook for an additional 5 minutes.

    Stir in maple syrup and cook for another 2-3 minutes until everything is well combined and heated through.
