    Prepare the mussels

    Rinse the mussels under cold water, scrubbing off any dirt. Remove any beards and discard any mussels that are open and do not close when tapped.

    Cook the chorizo

    In a large pot, heat olive oil over medium heat. Add the chorizo and cook until browned and slightly crispy, about 4-5 minutes.

    Add vegetables

    Add the minced garlic, chopped scallions, and diced celery to the pot. Sauté for another 3-4 minutes until the vegetables are softened.

    Incorporate the mussels

    Add the prepared mussels to the pot and pour in the white wine. Stir in the yellow curry powder, salt, and black pepper.

    Steam the mussels

    Cover the pot and steam the mussels for about 5-7 minutes, or until they have opened up. Discard any mussels that remain closed.

    Serve

    Serve the mussels hot in a bowl, with the chorizo and broth spooned over the top. Enjoy!
