    Caramelizing the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 25-30 minutes.

    Add minced garlic to the pot and sauté for 1-2 minutes until fragrant. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Add the beef broth, thyme, and bay leaf. Bring the soup to a boil, then reduce heat and let it simmer for 30 minutes. Season with salt and black pepper to taste.

    While the soup simmers, preheat the oven to 350°F (175°C). Cut a baguette into slices, brush with olive oil, and toast in the oven until golden brown.
