Focaccia Bread Preparation

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt.

Combine Mixtures
Add the frothy yeast mixture and olive oil to the dry ingredients. Mix until a shaggy dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Prepare Baking Pan
Grease a baking sheet or pan with olive oil. Preheat the oven to 425°F (220°C).

Shape the Focaccia
Once the dough has risen, punch it down and transfer it to the prepared baking sheet. Press it out gently to fit the pan.

Add Toppings
Dimple the surface of the dough with your fingers, drizzle with olive oil, sprinkle with fresh rosemary and coarse sea salt.

Second Rise
Cover the dough again and let it rise for another 20-30 minutes.

Bake
Bake in the preheated oven for 20-25 minutes or until golden brown.

Cool and Serve
Allow the focaccia to cool slightly before slicing. Serve warm with seasonal butter.
