Cook the Linguini
In a large pot, bring salted water to a boil. Add the gluten-free linguini pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare Chicken
Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.

Batter the Chicken
In a shallow dish, whisk the eggs. In another shallow dish, place the gluten-free flour. Dip each chicken breast into the flour, shaking off excess, then into the eggs, coating well.

Sauté the Chicken
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1 minute until fragrant. Add the white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes until slightly reduced.
